"Greatest Hits" v "Deep Tracks"

I know this could be a loaded question and is only asked out of curiosity. Personally, as long as the music is good and moves me, I don't care, but of course I'd be lying if I said I didn't want to hear some specific things. I also understand that some of these acts don't have "Greatest Hits" per say (though certainly more popular tracks than others).
So, with that preamble out of the way, I would ask what you all think as far as how a lot of these performances are going to balance what "the people want to hear" versus "what the band wants to play" (not that the two are mutually exclusive).
I'm of the mind that these Tribute Acts will hit all the solid stuff with a few deeper cuts?
For example, if The Doobie Incident doesn't play 'China Grove', I'll be disappointed. If they play "Steamer Lane", I'll probably lose my shit.
If MD&E doesn't play "The Weight", I WILL lose my shit but if they pull out something totally unexpected, I may forget that said shit was being lost.
If the JA set doesn't include "Don't You Want Somebody to Love" = disappointed, but does include some acid rock jammy type gooeyness like "Good Shepherd" = not so disapointed.
For the non-tribute sets, I have no clue:
Never heard Steve Earl live and really looking forward to it and dying to hear "Copperhead Road", but since I never heard him live, expectations are high for a good set with no expectations for actual set itself. Which makes perfect sense if you were me.
Galactic made my face slide off seeing a live "Hey na na" but still bringing a face sling to the late night regardless.
Robert Plant, I certainly want to hear Zep but done in his current way w/ this group. With two sets, I will be disappointed if Zep isn't given some time.
With a lot of the other acts, there are tons of songs I want to hear, so between that mix, it'll be solid and the additional "never heard this before but Jeebus, why the hell haven't I heard this before...hey dude what's the name of this song so I can go home and listen to variations of it..."
And anything Dead related is moot. Like Phish, no matter what is played, its totally what I wanted to hear, I forgot I wanted to really hear that, and I though I wished they had played that but in retrospect since I'm still picking of pieces of my brain, I can't remember what the big deal was about wanting to hear whatever it was I forgot I wanted to hear.
